We have a full list of foods to avoid in our house. Our youngest son is gluten free and our middle son is allergic to nuts, red dye, and blue dye. At first it seemed very overwhelming trying to figure out what to feed everyone. Like many other families, our schedules were leading us to eating on the go far too many nights of the week, but with the dietary changes we were faced with we needed to make some fast changes.
In my personal challenge to try to be "super mama" I found myself spending countless hours in the kitchen and losing far too much time daily that could have been spent playing with my kids, doing other things that needed to get done in the house, and I was getting tired and crabby with anyone who looked at me. I decided to commit to making things easier instead of trying to be Betty Crocker all the time. I committed to not spending more than 30 minutes on the meals for the day.
I also started planning my meals at the end of the previous week. Some people choose to plan meals bi-weekly or monthly, but this didn't work well for us. Things always seemed to creek up on the calendar unexpectedly and left us in a bind for meals. Typically by Friday we have a very good idea of what the next week will bring us, and by committing no more than 30 minutes each day to meals, I thought this was a win-win for our family.
Here is our meal plan for this next week. Many of these meals can be adjusted to your liking, so feel free to use them as part of a rotating meal plan for your house.
